Parisian-inspired baking at Ellie’s – Providence, R.I.

This Parisian-inspired bakery and cooking school, in the heart of downtown Providence, makes sure students learn all the ins and outs of baking, from rolling out the dough and making the crust to creating delicious fillings. Their goal is for you to make a successful pie every time.  Classes include tips and tricks on creative ways to utilize pie dough and scraps.

Farm to Table at Appleton Farms – Hamilton and Ipswich, Mass.

Bakers celebrate the pie in this Farmhouse dining room class, where everything from baking ingredients to the dining table is closely tied to the land. Located in a historic farm and education center rooted in regenerative practices, students get a review of pie crust techniques from mixing and rolling all-butter pie dough, as well as a demonstration of two different styles of crimping. The end result: a meal of savory pie, salad and classic dessert pie to showcase the holiday season, along with an informal Q&A with pie queen, Kami Turgeon. The class includes a Farmhouse recipe book and frozen pie crust to take home.

Easy as Pie at King Arthur Flour – Norwich, Ver.

The in-person version of “Easy as Pie” at the King Arthur Flour Baking Education Center makes a not-so-solemn promise: “This class will banish even the worst case of crust anxiety!” There are other small-group dessert classes throughout the season, and Norwich is a postcard-perfect vision of New England in winter, just across the river from Hanover, N.H. and the gorgeous Dartmouth College campus. The cooking school’s online video on essential pie tools, from a digital scale to rolling pins, pie plates and parchment, echoes the easy, enthusiastic vibe of the classes.

Down East Ambrosia – Bar Harbor, Maine

The classic Maine meal, lobster and blueberry pie, is a feature at Ambrosia Cooking School, in the tony vacation town of Bar Harbor. These seasonal treats, as well as other dessert classes, will fill your head with new techniques and your body with New England delicacies.
